Hey WhoCares Visitors

Well, since I got a mention among you folks, I figured I better post something current.

Today's smoothie-- a variation on an oldy but goody:

1 frozen banana
1/3 can pineapple with a bit of juice
1/3 c. coconut milk (not that wimpy light stuff)
4 large romaine leaves
1 generous handful of parsley
water

Yummy!

Plus, we each had a wee bowl of oatmeal and the adults had coffee.

1/3 can pinapple (plus a bit of juice)
1 ripe banana
2 generous handfuls of fresh spinach
1 generous handful of fresh parsley
1/4 c. coconut milk
1 large glassful of water.

coconut milk or orange juice

Solved a problem

I haven't liked using strawberries in green smoothies because it turns them brown. Even if they taste good, it has been hard to stomach drinking something brown. Here's my solution for a bright pink smoothie:

1 beet*
1 banana
6-8 strawberries
1/2 bunch romaine
water

*since I'm working with a food processor, I microwaved my beet for 30 seconds and plunked it in ice water before blending.

smoothie for one this morning: (K. went to work early)

large handful of spinach and lettuce
several slices cucumber
a bit of leftover pineapple
a frozen banana
coconut milk*

*coconut milk is divine. K and I went out for Thai the other night and ended our meal with an amazing, amazing dessert-- sticky rice with coconut milk and mango. I think this has started a coconut milk resurgence in my life.

I'm starting to realize I like smoothies with at least 1 banana in them-- makes it a bit more smooth and creamy.

I love this change.

Since we've committed to doing a green smoothie every morning and a fresh green salad every night (really, a very easy commitment since both taste good and we've quickly noticed that we feel better)-- Ive been buying more produce than I every have before.

I love that today I ran to the grocery store and purchased:
1 head of romaine
1 bunch of radishes
3 kiwis
strawberries
1 zucchini

No processed anything. We will blow thru all of this in 2 days no problem-- probably one day. But, i'm out of grocery budget money so until Friday, this is what we have.

This was so yucky this morning. So yucky we even let my son say "This is yucky" which he is not supposed to say in regards to anything I make for him (he's supposed so say something like: This is not my favorite) I tried to pretend it wasn't, but it didn't work.

It was like drinking raw fiber.
